Ingredients:
1/4 cup red quinoa
1 cup cubed butternut squash
1/2 avocado
1 tbsp olive oil
1 pinch salt
1 pinch cracked red pepper
1 tbsp pecans
1 cup broccoli
Make it:
In one pan combine squash, broccoli, pecans, and olive oil and saute until squash is soft. Cook 1 part quinoa with 2 parts boiling water until water is fully absorbed. Combine all ingredients and serve warm. Season with salt and cracked red pepper.
