Summer Quinoa Recipe


A new favorite recipe to make this summer has been this healthy quinoa salad we whipped up with what happened to be in the fridge.  This easy dish has been  so popular at the beach with my family this summer!  It makes a wonderful side for dinner or can be served over Kale for a refreshing vegetarian lunch full of colorful vegetables and light protein. Enjoy al fresco!




   

Make it:

Ingredients:
     One sliced Avocado
     Two cups strained black beans
     One cup sliced tomatoes
     One cup shaved carrots
     One cup sliced onion
     1/4 cup Olive Oil
     2 cups Quinoa

Cook Quinoa as directed on package and add ingredients once grains turn white and fluffy.  Serve chilled.
